White Tea
|

Only leaves of the 'Fuding
Dai Bai Cha', the big white tea bush, are
picked for use in this tea. The archetypal
plant is today found in the Tai-Mu mountains,
half an hour's drive from the city of Fuding.
Only the first undamaged shoots of the spring
brushes are used in the production of white
tea. The characteristic white, downy hairs,
which cover the bud, give the tea its name.
